Summer is nearer than ever and vegetables will be growing in many of our backyards very soon. This salad is a throw together of your favorite veggies. Cauliflower, broccoli, radishes and corn…why do those go so well together? It’s a chop up and devour type of salad 🙂 If you’re missing any of these ingredients, that’s not a problem because even with one vegetable missing you will barely notice it. It’s also very light but yet filling, I don’t know if that made any sense…but anyways, I would love to hear from you if you enjoy this salad as much as I do!

Ingredients for the salad:

  • 1 cauliflower
  • 1 1/2 cup broccoli
  • 2 small cucumbers
  • 6 radishes
  • 2-3 green onions
  • 1 can corn
  • 3/4 cup Mayonnaise
  • 2 Tbsp White Wine Vinegar
  • 1 tsp salt
  • 2 tsp sugar

Instructions for the cauliflower salad:

  1. Cut up all of the vegetables (I like them chopped as small as possible, it makes the salad juicier)
  2. Take a large bowl and layer the salad into it. I cut up the cauliflower first, then broccoli, cucumbers, radishes, and green onions. Then drain your corn and add to the top of the salad. I feel that this way your salad stays fresher and it doesn’t stink up the other vegetables. 
  3. Place into refrigerator until ready to serve. It can last couple of days without mixing it. When ready to mix, add 3/4 cup mayonnaise, 2 tbsp white wine vinegar, salt and 2 tsp sugar. Mix everything together and serve! Once you add everything the salad doesn’t last long so eat it right away, which I’m sure won’t be a problem.
