It’s been awhile since I’ve made this bread. Well not that long ago, just last blueberry season 🙂 I promise, if you have a load of blueberries and you need to do something with them, here is one perfect way to use those delicious blueberries. It was once upon a time in South Carolina, my family was visiting and one of my relatives had this made bread. She offered it to me and I thought, “Blueberry bread? I’m sure it’s not that great but i’ll try it.” It took one bite and I regretted trying because now I knew I wouldn’t stop at one piece, it blew me away! Like away away, the moisture of that bread, almost like eating a cheesecake, the blueberries hitting every right note, oh I was in heaven! “How could a blueberry bread be this amazing” I asked? I stole the recipe right then and there, and we’ve never parted since. The original recipe came from a food blogger, Tasty Kitchen, but we had to make some adjustments to it.

Make sure you follow all steps very closely! It gets confusing at times but I’ll try to make it as simple as I can. And be prepared to use a ton of mixing bowls! This is the fun part 😉

Ingredients for the bread:

  • 2 sticks butter (softened)
  • 1/2 cup sugar
  • 1/4 tsp. salt
  • 1 tsp. vanilla extract
  • 2 egg yolks
  • 1 1/2 cup flour
  • 1 tsp. baking powder
  • 1/3 cup milk
  • 2 cups fresh blueberries
  • 1 tbsp. flour
  • 2 egg whites
  • 1/2 cup sugar

Ingredients for the filling:

  • 1 cream cheese (softened)
  • 1/2 cup sugar
  • 1 tbsp. flour
  • 1 egg

Ingredients for the glaze:

  • 2 tbsp. sugar
  • 1/2 tsp. vanilla extract
  • 1-2 tsp. water

  1. We first begin with making the filling. Look at the measurements for the FILLING. In a medium bowl, combine 1 cream cheese, 1/2 cup sugar, 1 tbsp flour, and 1 egg. Beat until smooth. Set aside. DSC_5379
  2. Stir the ingredients for the glaze. Take 2 tbsp of sugar, 1/2 tsp of vanilla extract and 1 or 2 tsp of water, mix together and also set aside.
  3. Now it’s time to follow the bread ingredients. Cream 2 sticks of butter and 1/2 cup of sugar until fluffy. Add 1/4 tsp salt and 1 tsp vanilla extract. Then add 2 egg yolks to the mixture and beat until creamy. (save the egg whites for later) Set aside. DSC_5381
  4. In another bowl, combine 1 1/2 cups flour with 1 tsp of baking powder. Add this mixture alternately with 1/3 cups of milk to the egg yolk mixture. Coat the berries with 1 tbsp of flour and add them into the mixture as well. DSC_5388
  5. In a separate bowl, beat the 2 egg whites until soft peaks form. Add 1/4 cup of sugar, a little at a time until soft peaks form. DSC_5394
  6. Fold the egg whites into the batter. DSC_5396
  7. Pour half or less of the batter into a floured and greased bread pan. DSC_5400
  8. Layer the cream cheese filling over the batter. DSC_5402
  9. Finish with the remaining batter, this process will create a layer of “cheesecake” between the blueberry batter. Pour the glaze over the top and bake at 350 for about 1:35. DSC_5405

I baked mine for an hour and the “cream cheese” filling part was still gooey and unbaked. So make sure you bake it long enough!
